How To Make Feijoada

Ingredients
- 1 pound of black beans
- 1 pound of smoked pork ribs
- 1 pound of smoked sausage
- 1/2 pound of bacon, diced
- 1 onion, chopped
- 4 cloves of garlic, minced
- 2 bay leaves
- 1 tablespoon of vegetable oil
- Salt and pepper to taste
- Farofa (toasted cassava flour) for serving
Instructions

Rinse the black beans and soak them overnight in cold water.

In a large pot, heat the vegetable oil over medium heat. Add the diced bacon and cook until crispy.

Add the chopped onion and minced garlic to the pot and cook until they are softened and fragrant.

Drain the soaked black beans and add them to the pot. Fill the pot with enough water to cover the beans by 2 inches.

Add the smoked pork ribs, smoked sausage, and bay leaves to the pot. Season with salt and pepper to taste.

Bring the mixture to a boil, then reduce the heat to low and simmer for 2 hours, or until the beans are tender and the meats are cooked through.

Remove the bay leaves from the pot and taste for seasoning. Adjust the salt and pepper if needed.

Serve the feijoada hot with cooked white rice, farofa, and your favorite sauces or toppings.
