How to Make Steamed Sea Bass with Chili, Lime, and Garlic
You can't go wrong with a steamed sea bass cooked Thai-style! Served with a sweet and sour salsa made from Thai chilies, lime juice, and garlic.

Ingredients
- 1 medium-sized barramundi, (Asian sea bass) short enough to fit in a steamer
- 3 tbsp garlic, finely chopped or pressed
- 4 Thai hot chilies, or use mild red peppers, or a mix
- ¼ cup fresh lime juice
- 3 tbsp fish sauce
- 2 tbsp coconut sugar, or other sugar, dissolved in a little water
- ¼ cup coriander, cilantro leaves, chopped
- 4 sprigs chinese celery
Instructions
- Dissolve the coconut sugar in a little hot water, then mix it together with fish sauce, lime juice, chopped garlic, and hot chilies.
- Let it marinate for 10 minutes.

Steam the whole fish for 7 to 10 minutes or until fully cooked.
- Place on a serving platter with Chinese celery leaves and chopped stems.
- Add the chopped cilantro to the sauce and then spoon over the hot fish.

Serve with steamed rice. Enjoy!
