  • 4 sea bass fillets
  • 1 cup wild garlic leaves
  • 1 cup mayonnaise
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a blender, combine the wild garlic leaves, mayonnaise, lemon juice, olive oil, salt, and pepper. Blend until smooth.

  3. Season the sea bass fillets with salt and pepper on both sides.

  4. Heat a large skillet over medium-high heat and add some olive oil. Place the fillets skin side down and cook for 3-4 minutes until the skin is crispy.

  5. Transfer the sea bass fillets to a baking dish and spoon the wild garlic mayonnaise over the top.

  6. Bake in the preheated oven for 10-12 minutes, or until the fish flakes easily with a fork.

  7. Serve the sea bass with wild garlic mayonnaise on top.
