Ingredients

  • 4 steaks (about 1 inch thick)
  • salt and pepper, to taste
  • 1 cup fresh parsley leaves
  • 1/2 cup fresh cilantro leaves
  • 3 cloves garlic
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Preheat a grill or grill pan to high heat.

  2. Pat the steaks dry and season generously with salt and pepper on both sides.

  3. In a blender or food processor, combine the parsley, cilantro, garlic, red wine vinegar, olive oil, and red pepper flakes. Blend until smooth.

  4. Grill the steaks for about 4-5 minutes per side, or until desired level of doneness. Let them rest for a few minutes before slicing.

  5. Serve the sliced steak with a generous drizzle of the chimichurri dressing on top.
