Ingredients

  • 4 beef steaks (approximately 1 inch thick)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • For the Chimichurri Sauce:
  • 1 cup packed fresh parsley leaves
  • 1/4 cup packed fresh cilantro leaves
  • 4 garlic cloves
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon dried oregano
  • 1/2 cup extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat your grill or grill pan to high heat.

  2. Season the steaks generously with salt and pepper on both sides.

  3. Drizzle olive oil over the steaks and rub it in to coat evenly.

  4. Place the steaks on the hot grill or grill pan and cook for about 4-5 minutes per side for medium-rare (adjust cooking time based on desired doneness).

  5. While the steaks cook, prepare the chimichurri sauce. In a food processor, combine parsley, cilantro, garlic, red wine vinegar, red pepper flakes, and dried oregano. Pulse until finely chopped.

  6. Gradually add the olive oil in a steady stream while the food processor is running. Continue blending until the sauce is well combined. Season with salt and pepper to taste.

  7. Once the steaks are cooked to your desired level of doneness, remove them from the grill and let them rest for a few minutes.

  8. Slice the steaks against the grain and serve with a generous drizzle of chimichurri sauce on top.
