How To Make Bracciole (Flank Steak Rolls)

  • 4 (6 oz) flank steaks
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp chopped fresh parsley
  • 4 slices prosciutto
  • 1/4 cup grated Pecorino Romano cheese
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • 2 cups tomato sauce


  1. Lay each flank steak flat and pound until thin.

  2. In a bowl, combine breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, Pecorino Romano cheese, salt, and black pepper.

  3. Place a slice of prosciutto on each pounded steak and sprinkle with the breadcrumb mixture.

  4. Roll up each steak tightly and secure with toothpicks.

  5. In a large skillet, heat olive oil over medium heat. Brown the steak rolls on all sides.

  6. Pour tomato sauce over the steak rolls, cover, and simmer for 1 hour, or until the steak is tender.

  7. Remove toothpicks before serving.
