Ingredients
- 1 cup red lentils
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 2 carrots, diced
- 2 potatoes, peeled and diced
- 4 cups vegetable broth
- 1 tablespoon tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh mint leaves for garnish

In a large pot, heat some olive oil and sauté the onions and garlic until fragrant.
