- 1 lb beef stew meat, cut into cubes
- 2 medium beets, peeled and grated
- 2 carrots, peeled and grated
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups shredded cabbage
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 bay leaf
- 1 tsp dried dill
- 1 tsp salt
- 1/2 tsp black pepper
- Sour cream, for serving
- Fresh dill, for garnish
Instructions

In a slow cooker, combine the beef stew meat, grated beets, grated carrots, chopped onion, minced garlic, beef broth, shredded cabbage, diced tomatoes, bay leaf, dried dill, salt, and black pepper. Stir well to combine.

Cover and cook on low heat for 6-8 hours or on high heat for 4-5 hours, until the beef is tender.

Remove the bay leaf and taste for seasoning, adding more salt and pepper if needed.
