Enjoy a comforting bowl on a cold day with this spinach soup, made with chicken broth, carrot, and Italian pork sausage, for a light and delicious dish.

  • vegetable cooking spray,for greasing
  • ½lbsweet Italian pork sausage
  • 4cupsSwanson® Chicken Broth
  • ½tspdried oregano leaves
  • 1medium onion
  • 1medium carrot
  • 2cupsfresh spinach leaves,coarsely chopped


  1. Spray a 10.6×10.5×6.6-inch saucepot with the cooking spray and heat over medium-high heat for 1 minute. Add the sausage and cook until it’s well browned, stirring often. Pour off any fat.

  2. Stir the broth, oregano, onion, and carrot in the saucepan. Heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes or until the sausage is cooked through.

  3. Stir the spinach in the saucepan and cook for 1 minute.

  4. Serve and enjoy.
