How To Make Spinach & Watercress Soup

Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 4 cups baby spinach
- 2 cups watercress
- Salt and pepper, to taste
- 1/2 cup heavy cream (optional)
Instructions

In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté until they are softened.

Add the vegetable broth to the pot and bring it to a boil. Reduce the heat to low and simmer for about 5 minutes.

Stir in the spinach and watercress and cook until they have wilted, about 3-4 minutes.

Use an immersion blender or transfer the soup to a blender and blend until smooth.
