  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups chopped fresh spinach

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until translucent.

  2. Add the carrots, celery, zucchini, diced tomatoes, vegetable broth, dried thyme, and dried oregano to the pot. Season with salt and pepper to taste.

  3. Bring the soup to a boil, then reduce heat and simmer for 30 minutes or until the vegetables are tender.

  4. Stir in the chopped fresh spinach and cook for an additional 5 minutes.
