Ingredients

  • 4 large onions, thinly sliced
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp thyme leaves
  • 1/2 cup dry white wine
  • 4 cups beef broth
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 4 slices of baguette
  • 2 cups shredded Gruyere cheese

Instructions

  1. Melt butter and oil in a large pot over medium-low heat. Add onions and garlic, and cook for 35-40 minutes until caramelized.

  2. Add thyme and wine, and cook until liquid has evaporated.

  3. Pour in beef broth, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 30 minutes.

  4. Preheat broiler. Ladle soup into 4 oven-safe bowls. Top each bowl with a slice of bread and 1/2 cup of cheese.

  5. Place bowls on a baking sheet and broil for 2-3 minutes until cheese is bubbly and golden.
