Ingredients
- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups of chicken or vegetable broth
- 1 cup of milk
- 1/2 cup of heavy cream
- 8 oz (226g) of Velveeta® cheese, cubed
- Salt and pepper to taste
- Chopped green onions, for garnish
Instructions

In a large pot, sauté the onion and garlic until softened.

Add the diced potatoes and broth to the pot and bring to a boil. Cook until the potatoes are tender, about 15 minutes.

Reduce heat to low and stir in the milk, heavy cream, and Velveeta® cheese cubes. Cook until the cheese is melted and the soup is creamy.
