  • 4 potatoes, peeled and chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 chorizo sausage, sliced
  • 4 cups of chicken broth
  • 2 cups of kale, chopped
  • Salt and pepper to taste


  1. In a large pot, heat some olive oil over medium heat. Add the onions and garlic and sauté until fragrant.

  2. Add the chorizo sausage and cook until browned.

  3. Add the potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for about 30 minutes or until the potatoes are tender.

  4. Add the kale to the pot and cook for an additional 5 minutes or until the kale is wilted.

  5. Season the soup with salt and pepper to taste.

  6. Serve hot and enjoy!
