How To Make Portuguese Bean Soup

A hearty soup with sausage, beans, and vegetables, packed with flavor and perfect for a cold day.

Serves:

Ingredients

  • 1 lb linguica or chourico sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 4 cups chicken broth
  • 2 cups water
  • 1 can kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 bunch kale, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook sausage until browned, then remove from pot.

  2. Add onion and garlic to pot and cook until soft.

  3. Add carrots and potatoes and cook for 5 minutes.

  4. Add chicken broth, water, beans, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 1 hour.

  5. Add kale and cooked sausage to pot and simmer for an additional 20 minutes.

  6. Season with salt and pepper to taste.
