How To Make Portuguese Bean Soup
A hearty soup with sausage, beans, and vegetables, packed with flavor and perfect for a cold day.
Serves:
Ingredients
- 1 lb linguica or chourico sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 potatoes, diced
- 4 cups chicken broth
- 2 cups water
- 1 can kidney beans, drained and rinsed
- 1 can diced tomatoes
- 1 bunch kale, chopped
- Salt and pepper to taste
Instructions

In a large pot, cook sausage until browned, then remove from pot.

Add onion and garlic to pot and cook until soft.

Add carrots and potatoes and cook for 5 minutes.

Add chicken broth, water, beans, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 1 hour.

Add kale and cooked sausage to pot and simmer for an additional 20 minutes.

Season with salt and pepper to taste.
