How To Make Portuguese Caldo Verde Soup Recipe

A traditional Portugese soup made with potatoes, kale, and chorizo sausage.

Ingredients

  • 3 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 large potatoes, peeled and chopped
  • 1/2 pound chorizo sausage, sliced*
  • 4 cups kale leaves, finely chopped
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.

  2. Add the diced onion and garlic, stirring until softened, about 5 minutes.

  3. Pour in the chicken or vegetable broth and add the chopped potatoes. Bring to a boil and then reduce heat to low, cover and simmer until the potatoes are tender, about 20 minutes.

  4. In a separate pan, cook the sliced chorizo over medium heat until browned and crispy around the edges.

  5. Puree the soup until smooth using an immersion blender or transfer to a blender and blend until smooth.

  6. Return the pureed soup to the pot and add in the finely chopped kale and cooked chorizo. Simmer until the kale is wilted and cooked through, about 10 minutes.

  7. Season with salt and pepper to taste.

  8. Serve hot with crusty bread, if desired.
