  • 4 cups kale, finely chopped
  • 2 potatoes, peeled and diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup Portuguese chouriço or linguica sausage, sliced
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic and cook until softened.

  2. Add the sausage and cook until browned.

  3. Add potatoes and broth to the pot, bring to a boil and cook until potatoes are tender.

  4. Using a potato masher or immersion blender, partially mash the potatoes.

  5. Add kale to the pot and cook until wilted, about 5 minutes.

  6. Season with salt and pepper to taste.

  7. Serve hot, drizzled with olive oil.
