How To Make Spicy Thai Noodle Soup Recipe
This soup is a flavorful blend of Thai spices and noodles in a savory broth that will warm you up on a cold day.

Ingredients
- 8 oz. rice noodles
- 1 tbsp. vegetable oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 tbsp. red curry paste
- 1 can (14 oz.) coconut milk
- 4 cups chicken broth
- 1 tbsp. fish sauce
- 1 tbsp. brown sugar
- 1 lime, juiced
- 1 cup chicken breast, cooked and shredded
- 1 cup bean sprouts
- 1/2 cup cilantro leaves, chopped
- 2 green onions, sliced
- 1 red chili pepper, sliced
- Lime wedges, for serving
Instructions

Cook rice noodles according to package directions. Drain and set aside.

In a large pot, heat vegetable oil over medium heat. Add onion and garlic and cook until onion is translucent.

Add red curry paste and cook for 1-2 minutes. Add coconut milk, chicken broth, fish sauce, and brown sugar. Bring to a simmer and cook for 10 minutes.

Add lime juice, chicken, and bean sprouts to the soup and cook for 5 minutes.

To serve, divide the cooked rice noodles into 4 bowls and pour the soup over the noodles.

Top each bowl with cilantro, green onions, and chili pepper slices. Serve with lime wedges.
