Ingredients

  • 1 cup dried lentils
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 tsp ground cardamom
  • 1/2 tsp cumin
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Rinse the lentils under cold water and drain.

  2. In a large pot, heat some oil over medium heat and sauté the onion, garlic, carrot, and celery until softened.

  3. Add the lentils, vegetable broth, ground cardamom, cumin, turmeric, salt, and pepper to the pot.

  4. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the lentils are tender.

  5. Use an immersion blender or transfer the soup to a blender and blend until smooth.

  6. Serve hot, garnished with fresh cilantro.
