How To Make Chorizo & Chickpea Summer Stew

Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 chorizo sausage, sliced
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) chickpeas, drained and rinsed
- 2 cups chicken broth
- 1 tsp smoked paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

Heat olive oil in a large pot or Dutch oven over medium heat. Add onions and garlic, sauté until onions are translucent.

Add the diced bell peppers and chorizo sausage to the pot. Cook for about 5 minutes until the sausage is browned and peppers are tender.

Stir in the diced tomatoes, chickpeas, chicken broth, smoked paprika, cumin, salt, and pepper. Bring the mixture to a boil, then reduce heat to low and simmer for 30 minutes.

Adjust the seasoning if needed. Serve the stew hot, garnished with fresh parsley.
