Ingredients

  • 8 ounces of noodles
  • 4 large eggs
  • 2 tablespoons of vegetable oil
  • 1 onion, thinly sliced
  • 3 cloves of garlic, minced
  • 1 thumb-sized ginger, grated
  • 4 cups of chicken or vegetable broth
  • 2 cups of water
  • 2 tablespoons of soy sauce
  • 1 tablespoon of fish sauce
  • 1 teaspoon of sugar
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, sliced chili peppers, bean sprouts, lime wedges

Instructions

  1. Cook the noodles according to package instructions. Drain and set aside.

  2. Soft boil the eggs: Bring a pot of water to a boil. Gently lower the eggs into the boiling water using a spoon and cook for 6 minutes. Remove the eggs and place them in a bowl of ice water to cool. Peel and set aside.

  3. In a large pot, heat the vegetable oil over medium heat. Add the sliced onion, minced garlic, and grated ginger. Cook until lightly browned and fragrant.

  4. Pour in the chicken or vegetable broth and water. Bring to a boil.

  5. Add the cooked noodles to the pot and simmer for 5-10 minutes until heated through.

  6. Stir in the soy sauce, fish sauce, and sugar. Season with salt and pepper to taste.

  7. Divide the soup into bowls. Cut each soft boiled egg in half and place two halves in each bowl.

  8. Serve hot, garnished with optional toppings if desired.
