Ingredients

  • 4 potatoes, peeled and chopped
  • 1 onion, chopped
  • 4 cups of chicken broth
  • 2 cloves of garlic, minced
  • 1 tsp of dried thyme
  • 1 tsp of salt
  • 1/4 tsp of black pepper
  • 1 cup of heavy cream
  • 1/4 cup of chives, chopped
  • Optional toppings: shredded cheese, crumbled bacon

Instructions

  1. Add potatoes, onion, chicken broth, garlic, thyme, salt, and pepper to a crockpot.

  2. Cook on low heat for 7 hours.

  3. Use an immersion blender to puree the soup until smooth.

  4. Stir in heavy cream and chives.

  5. Serve hot, with optional toppings.
