  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 medium zucchini, spiralized into noodles
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish


  1. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until fragrant and translucent.

  2. Add chicken breasts to the pot and cook until browned on all sides.

  3. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until chicken is fully cooked.

  4. Remove chicken from the pot and shred using two forks. Return the shredded chicken to the pot.

  5. Add the zucchini noodles, thyme, and oregano to the soup. Cook for an additional 5 minutes, or until zucchini is tender.

  6. Season with salt and pepper to taste.

  7. Ladle the soup into bowls and garnish with fresh parsley.
