Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 jalapeno, seeded and diced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) chickpeas, rinsed and drained
- 1 can (15 oz) diced tomatoes
- 1 cup vegetable broth
- Salt and pepper to taste
- Optional toppings: avocado, cilantro, shredded cheese, sour cream
Instructions

Heat the olive oil in a large pot over medium heat. Add the onion, garlic, red bell pepper, and jalapeno. Cook until softened, about 5 minutes.

Add the cumin, chili powder, and smoked paprika to the pot. Stir to coat the vegetables in the spices.

Add the black beans, chickpeas, diced tomatoes, and vegetable broth to the pot. Stir to combine. Bring to a simmer and let cook for 20 minutes to allow the flavors to meld together.
