Ingredients

  • 2 pounds beef stew meat
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 1 can diced tomatoes, undrained
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Place the beef stew meat, onion, garlic, bell pepper, and jalapeno pepper in the slow cooker.

  2. In a bowl, whisk together the diced tomatoes, beef broth, tomato paste, chili powder, cumin, paprika, oregano, salt, and pepper. Pour the mixture over the beef and vegetables in the slow cooker.

  3. Cover and cook on low for 6 hours, or until the beef is tender.

  4. Serve the carne guisada over rice or with tortillas. Garnish with fresh cilantro and serve with lime wedges for squeezing over the dish.
