  • 2 cups grated carrots
  • 1 cup flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, combine the grated carrots, flour, sugar, baking powder, cinnamon, nutmeg, and salt.

  3. Stir in the milk and melted butter until well combined.

  4. Fold in the raisins and chopped walnuts.

  5. Pour the mixture into a greased baking dish.

  6. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
