How To Make Soy & Ginger Salmon with Soba Noodles

Ingredients
- 4 salmon fillets
- 1/4 cup soy sauce
- 2 tablespoons freshly grated ginger
- 2 tablespoons honey
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 8 ounces soba noodles
- 1 cup sugar snap peas, trimmed
- 1 red bell pepper, thinly sliced
- 2 green onions, thinly sliced
- Sesame seeds, for garnish
Instructions

In a small bowl, combine soy sauce, ginger, honey, rice vinegar, and sesame oil. Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 15 minutes.

Preheat the grill or grill pan over medium-high heat. Remove the salmon from the marinade, reserving the marinade for later.

Grill the salmon fillets for about 4-5 minutes per side, or until cooked to desired doneness. Baste the salmon with the reserved marinade during grilling.

While the salmon is grilling, cook the soba noodles according to package instructions. Drain and rinse with cold water.

In a large mixing bowl, combine the cooked soba noodles, sugar snap peas, sliced bell pepper, and green onions. Toss with the remaining marinade.

To serve, divide the noodle mixture onto plates and top with a grilled salmon fillet. Garnish with sesame seeds.
