How To Make Chicken Soba Noodles

Ingredients
- 8 oz soba noodles
- 2 boneless, skinless chicken breasts, sliced
- 4 cups chicken broth
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 green onions, sliced
- 1 cup sliced mushrooms
- 1 cup shredded carrots
- 1 cup snow peas
- 1 tsp sriracha (optional)
- Salt and pepper to taste
Instructions

Cook the soba noodles according to package instructions. Drain and set aside.

In a large pot, heat the sesame oil over medium heat. Add the garlic and ginger and cook until fragrant, about 1 minute.

Add the chicken to the pot and cook until browned and cooked through, about 5-7 minutes.

Pour in the chicken broth and soy sauce. Bring to a boil, then reduce heat and let simmer for 10 minutes.

Add the mushrooms, carrots, and snow peas to the pot and cook for an additional 5 minutes, or until vegetables are tender.

Stir in the cooked soba noodles and green onions. Cook for another 2-3 minutes to heat through.

Optional: Stir in sriracha for a spicy kick.

Season with salt and pepper to taste. Serve hot.
