How To Make Chicken Soba Noodles

Ingredients

  • 8 oz soba noodles
  • 2 boneless, skinless chicken breasts, sliced
  • 4 cups chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green onions, sliced
  • 1 cup sliced mushrooms
  • 1 cup shredded carrots
  • 1 cup snow peas
  • 1 tsp sriracha (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the soba noodles according to package instructions. Drain and set aside.

  2. In a large pot, heat the sesame oil over medium heat. Add the garlic and ginger and cook until fragrant, about 1 minute.

  3. Add the chicken to the pot and cook until browned and cooked through, about 5-7 minutes.

  4. Pour in the chicken broth and soy sauce. Bring to a boil, then reduce heat and let simmer for 10 minutes.

  5. Add the mushrooms, carrots, and snow peas to the pot and cook for an additional 5 minutes, or until vegetables are tender.

  6. Stir in the cooked soba noodles and green onions. Cook for another 2-3 minutes to heat through.

  7. Optional: Stir in sriracha for a spicy kick.

  8. Season with salt and pepper to taste. Serve hot.
