How To Make Smoked Haddock & Wild Mushroom Traybake

Ingredients
- 4 smoked haddock fillets
- 200g wild mushrooms, sliced
- 1 red onion, thinly sliced
- 2 cloves of garlic, minced
- 1 tbsp olive oil
- 1 tbsp fresh thyme leaves
- Zest of 1 lemon
- Salt and pepper, to taste
Instructions

Preheat the oven to 200°C (400°F).

In a large baking tray, combine the sliced mushrooms, red onion, minced garlic, olive oil, thyme leaves, lemon zest, and season with salt and pepper. Mix well.

Place the smoked haddock fillets on top of the mushroom mixture.

Bake in the preheated oven for 20-25 minutes, or until the haddock is cooked through and flakes easily with a fork.

Serve the smoked haddock and wild mushroom traybake hot, garnished with extra thyme leaves if desired.
