Ingredients

  • 4 sea trout fillets
  • 200g samphire
  • 200g potted shrimp
  • 1 lemon, sliced
  • Salt and pepper, to taste

Instructions

  1. Preheat the grill to medium-high heat.

  2. Season the sea trout fillets with salt and pepper.

  3. Place the fillets on the grill and cook for 4-5 minutes on each side, or until cooked through.

  4. Meanwhile, blanch the samphire in boiling water for 2 minutes, then drain.

  5. In a skillet, heat the potted shrimp until warmed through.

  6. Arrange the sea trout fillets on a platter.

  7. Top with the samphire and potted shrimp.

  8. Garnish with lemon slices.

  9. Serve hot and enjoy!
