How To Make Hot Tea-Smoked Trout with New Potato & Rocket Salad

Ingredients
- 4 trout fillets
- 2 tablespoons loose black tea leaves
- 2 tablespoons brown sugar
- 1 teaspoon whole black peppercorns
- 1 teaspoon sea salt
- 1 teaspoon paprika
- 500g new potatoes
- 4 cups rocket leaves
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions

Preheat a stove-top smoker or prepare a charcoal grill for indirect grilling.

In a small bowl, mix together the tea leaves, brown sugar, peppercorns, sea salt, and paprika.

Rub the trout fillets with the tea mixture, making sure they are evenly covered. Set aside to marinate for 10 minutes.

Meanwhile, boil the new potatoes in salted water until tender. Drain and let them cool slightly before slicing them into halves.

In a large bowl, combine the sliced new potatoes, rocket leaves, olive oil, lemon juice, salt, and pepper. Toss gently to coat everything with the dressing.

Once the smoker or grill is ready, place the marinated trout fillets on a greased smoking rack or a piece of aluminum foil with holes for the smoke to pass through.

Smoke the trout fillets for 12-15 minutes, or until cooked through and flaky.

Serve the hot tea-smoked trout on a bed of the potato and rocket salad.
