Ingredients

  • 4 sea trout fillets
  • salt and pepper, to taste
  • 1 cup fresh peas
  • 1 small red onion, finely diced
  • 1 jalapeno, seeds removed and finely diced
  • 1/4 cup fresh cilantro, chopped
  • juice of 1 lime
  • 2 tablespoons olive oil

Instructions

  1. Preheat grill to medium-high heat.

  2. Season sea trout fillets with salt and pepper.

  3. In a medium bowl, combine fresh peas, red onion, jalapeno, cilantro, lime juice, and olive oil. Mix well and set aside.

  4. Grill sea trout fillets for about 4-5 minutes per side, or until cooked through.

  5. Serve the grilled sea trout topped with the raw pea salsa.
