Ingredients

  • 4 sea bass fillets
  • 1 lb mixed seafood (such as shrimp, mussels, and calamari)
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup white wine
  • 1 cup fish or vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Season the sea bass fillets with salt and pepper. Set aside.

  2. In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion and minced garlic. Cook until the onion is translucent.

  3. Add the diced tomatoes, white wine, and fish or vegetable broth to the pot. Stir in the dried oregano, dried basil, and red pepper flakes. Season with salt and pepper to taste.

  4. Gently place the sea bass fillets in the pot, making sure they are submerged in the liquid. Bring the liquid to a simmer.

  5. Cover the pot and cook for 20 minutes. Then, gently stir in the mixed seafood and continue to cook for an additional 15-20 minutes, or until the seafood is cooked through and the sea bass is flaky.

  6. Remove the pot from heat and let it sit for a few minutes before serving. Garnish with fresh parsley.
