Ingredients

  • 4 salmon fillets
  • 2 fennel bulbs, thinly sliced
  • 2 oranges, segmented
  • 1 red onion, thinly sliced
  • 1 cup mixed salad greens
  • 1/4 cup chopped fresh dill
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Season the salmon fillets with salt and pepper, then bake for 10 minutes or until cooked through.

  2. In a large bowl, combine the sliced fennel, orange segments, red onion, mixed greens, and fresh dill.

  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.

  4. Divide the salad onto plates and top each with a cooked salmon fillet.

  5. Serve immediately and enjoy!
