Ingredients

  • 1 fennel bulb, sliced
  • 4 cups mixed greens
  • 1/4 cup fresh tarragon leaves
  • 1/4 cup chopped walnuts
  • 1/4 cup crumbled feta cheese
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. Rinse and dry the mixed greens, then place in a large salad bowl.

  2. Add the sliced fennel, tarragon leaves, chopped walnuts, and feta cheese to the bowl.

  3. In a separate bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper.

  4. Drizzle the dressing over the salad and toss well to combine.

  5. Serve immediately.
