  • 1 medium celeriac
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Peel the celeriac and cut it into matchstick-sized pieces using a sharp knife or a mandoline slicer.

  2. In a medium bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, olive oil, salt, and pepper to make the remoulade sauce.

  3. Add the celeriac to the bowl with the sauce and toss well to coat all the pieces evenly.

  4. Serve the celeriac remoulade chilled, garnished with fresh parsley.
