How To Make Summer Lamb with Carrot & Fennel Salad

Ingredients
- 1 lb lamb chops
- 2 cloves of garlic, minced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper, to taste
- 4 carrots, grated
- 1 fennel bulb, thinly sliced
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh parsley leaves, chopped
- 2 tbsp lemon juice
- 2 tbsp extra virgin olive oil
- Salt and pepper, to taste
Instructions

Preheat the grill or grill pan over medium-high heat.

In a small bowl, combine minced garlic, olive oil, lemon juice, salt, and pepper. Rub the mixture onto the lamb chops.

Grill the lamb chops for about 4-6 minutes per side for medium-rare, or until desired doneness. Remove from heat and let them rest for a few minutes.

In a large bowl, combine grated carrots, sliced fennel, mint leaves, parsley leaves, lemon juice, extra virgin olive oil, salt, and pepper. Toss to combine.

Slice the lamb chops and serve with the carrot and fennel salad.
