  • 2 fennel bulbs, thinly sliced
  • 2 clementines, peeled and segmented
  • 1/4 cup fresh mint leaves
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the sliced fennel bulbs, clementine segments, and fresh mint leaves.

  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  3. Pour the dressing over the fennel mixture and toss to combine.
