This creamy and savory chowder is loaded with fresh oysters and vegetables.
Serves:
Ingredients
- 1/2 cup of diced onion
- 1/2 cup of diced celery
- 1/2 cup of diced carrots
- 2 cups of chicken broth
- 2 cups of heavy cream
- 2 tablespoons of butter
- 1 teaspoon of dried thyme
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 pint of fresh shucked oysters, drained
Instructions

In a large pot, melt the butter on medium heat.

Add the onions, celery, and carrots and cook for 5 minutes, stirring occasionally.

Stir in the thyme, salt, and black pepper.

Pour in the chicken broth and bring the mixture to a boil.

Add the oysters and simmer for 2 minutes.

Pour in the heavy cream and continue to cook for 5-7 minutes, or until the chowder has thickened.
