Ingredients
- 1 lb octopus, cleaned and boiled
- 1/2 red onion, thinly sliced
- 1/2 cucumber, sliced
- 1/2 bell pepper, sliced
- 1/4 cup pitted Kalamata olives
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 tbsp Dijon mustard
- Salt and pepper, to taste
Instructions

Preheat grill to high heat.

Grill octopus for 2-3 minutes per side, until char marks are visible. Cut into bite-sized pieces.

In a large bowl, combine octopus, red onion, cucumber, bell pepper, olives, and parsley.

In a separate bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.

Pour dressing over salad and toss to coat.
