Ingredients

  • 2 large aubergines
  • 1 cup plain yogurt
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1/4 tsp cumin powder
  • 1/4 tsp paprika
  • Salt, to taste
  • Fresh coriander leaves, for garnish

Instructions

  1. Preheat the grill or broiler.

  2. Pierce the aubergines with a fork and place them on a baking sheet. Grill or broil them for about 10-15 minutes, turning occasionally, until the skin is charred and the flesh is soft.

  3. Remove the aubergines from the heat and let them cool for a few minutes. Peel off the charred skin and chop the flesh into small pieces.

  4. In a mixing bowl, combine the chopped aubergine, yogurt, minced garlic, lemon juice, cumin powder, paprika, and salt. Mix well until all the ingredients are combined and the dip is smooth and creamy.

  5. Garnish with fresh coriander leaves and serve chilled with naan bread or as a side dish to complement a main meal.
