How To Make Lemon & Almond Shortbread Bars

Ingredients
- 1 cup butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 cup almond flour
- Zest of 2 lemons
- Juice of 2 lemons
- 1 cup powdered sugar
Instructions

Preheat the oven to 350°F (180°C) and line a 9×9-inch baking dish with parchment paper.

In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Add the all-purpose flour, almond flour, and lemon zest to the butter mixture. Mix until well combined and a crumbly dough forms.

Press the dough evenly into the bottom of the prepared baking dish.

Bake in the preheated oven for 25 minutes, or until the edges are golden brown.

While the shortbread is baking, prepare the lemon glaze by whisking together the lemon juice and powdered sugar until smooth.

Remove the shortbread from the oven and immediately pour the lemon glaze over the top, spreading it out evenly.

Allow the bars to cool in the baking dish for about 10 minutes, then use the edges of the parchment paper to lift the bars out of the dish.

Transfer the bars to a cutting board and slice into squares or rectangles.
