How To Make Spring Asparagus Salad with Parmesan Recipe
A light and refreshing salad with fresh asparagus, shaved Parmesan cheese and a tangy vinaigrette. Perfect for spring!

Ingredients
- 1 bunch asparagus, tough ends removed
- 4 cups mixed greens
- 1/4 cup shaved Parmesan cheese
- 1/4 cup toasted pine nuts
- 3 tbsp extra-virgin olive oil
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 1 tbsp red wine vinegar
- Salt and pepper, to taste
Instructions

Preheat grill or grill pan to high heat.

Brush asparagus with olive oil and season with salt and pepper. Grill for about 5 minutes, until tender and lightly charred.

In a small bowl, whisk together olive oil, Dijon mustard, honey, red wine vinegar, salt and pepper to make the vinaigrette.

In a large bowl, toss together mixed greens, grilled asparagus, Parmesan cheese and toasted pine nuts. Drizzle with the vinaigrette and serve.
