How To Make Spring Asparagus Salad with Parmesan Recipe

A light and refreshing salad with fresh asparagus, shaved Parmesan cheese and a tangy vinaigrette. Perfect for spring!

  • 1 bunch asparagus, tough ends removed
  • 4 cups mixed greens
  • 1/4 cup shaved Parmesan cheese
  • 1/4 cup toasted pine nuts
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tbsp red wine vinegar
  • Salt and pepper, to taste


  1. Preheat grill or grill pan to high heat.

  2. Brush asparagus with olive oil and season with salt and pepper. Grill for about 5 minutes, until tender and lightly charred.

  3. In a small bowl, whisk together olive oil, Dijon mustard, honey, red wine vinegar, salt and pepper to make the vinaigrette.

  4. In a large bowl, toss together mixed greens, grilled asparagus, Parmesan cheese and toasted pine nuts. Drizzle with the vinaigrette and serve.
