How To Make Shaved Asparagus Salad

Ingredients
- 1 bunch of asparagus
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- Salt and pepper, to taste
- 1/4 cup of grated Parmesan cheese
- 1/4 cup of chopped almonds
Instructions

Trim the tough ends of the asparagus and use a vegetable peeler to shave the asparagus into thin ribbons.

In a bowl, whisk together the olive oil, lemon juice, salt, and pepper.

Add the shaved asparagus to the bowl and toss until evenly coated with the dressing.

Sprinkle the Parmesan cheese and chopped almonds over the salad and toss gently to combine.
