How To Make Whole Crispy Roast Chicken & Asparagus Caesar

Ingredients
- 1 whole chicken, approximately 4 pounds
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 bunch asparagus, trimmed
- 1 head romaine lettuce, chopped
- 1/4 cup grated Parmesan cheese
- Croutons, for serving
- Caesar dressing, for serving
Instructions

Preheat the oven to 425°F (220°C).

Place the chicken on a roasting pan and rub it with olive oil, salt, black pepper, paprika, and dried thyme.

Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).

While the chicken is roasting, blanch the asparagus in boiling water for 2 minutes, then transfer them to an ice bath to stop the cooking process. Drain and set aside.

In a large bowl, combine the chopped romaine lettuce, blanched asparagus, grated Parmesan cheese, croutons, and Caesar dressing. Toss well to coat.

Once the chicken is cooked, let it rest for 10 minutes before carving.

Serve the crispy roast chicken alongside the asparagus Caesar salad.
