For the Hoisin Peanut Sauce:

  • 2tbspcreamy peanut butter
  • 2tspreduced-sodium soy sauce
  • 1tsphoisin sauce
  • 1tspsriracha
  • 1/2tspgrated ginger
  • 4tbspwarm water,to thin

For the Bowls:

  • 24shrimp,jumbo, peeled and cooked
  • 2English cucumbers,large
  • 8ozcarrot,(1 thick)
  • 1cupred cabbage,shredded
  • 2tbspcilantro leaves
  • 12basil leaves
  • 12mint leaves
  • 2tbsppeanuts,chopped

Instructions

  1. Mix all the sauce ingredients in a small bowl and refrigerate until ready to use.

  2. Spiralize the cucumbers and carrots, then cut into 6-inch lengths. Divide the cucumbers, carrots, and red cabbage between 4 bowls.

  3. Top each with 6 shrimp, 2 tablespoons peanut dressing, fresh herbs, and chopped peanuts.
