For the Hoisin Peanut Sauce:
- 2tbspcreamy peanut butter
- 2tspreduced-sodium soy sauce
- 1tsphoisin sauce
- 1tspsriracha
- 1/2tspgrated ginger
- 4tbspwarm water,to thin
For the Bowls:
- 24shrimp,jumbo, peeled and cooked
- 2English cucumbers,large
- 8ozcarrot,(1 thick)
- 1cupred cabbage,shredded
- 2tbspcilantro leaves
- 12basil leaves
- 12mint leaves
- 2tbsppeanuts,chopped
Instructions

Mix all the sauce ingredients in a small bowl and refrigerate until ready to use.

Spiralize the cucumbers and carrots, then cut into 6-inch lengths. Divide the cucumbers, carrots, and red cabbage between 4 bowls.

Top each with 6 shrimp, 2 tablespoons peanut dressing, fresh herbs, and chopped peanuts.
