  • 1 can of heart of palm, drained and thinly sliced
  • 2 large tomatoes, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste


  1. In a large bowl, combine the sliced heart of palm, diced tomatoes, red onion, and parsley.

  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.

  3. Pour the dressing over the salad and toss gently to coat all the ingredients.
