How To Make Rojak

Ingredients
- 2 cucumbers
- 2 small green apples
- 1 sweet and sour pineapple
- 2 firm tofu
- 1 cup bean sprouts
- 1 cup boiled potatoes, diced
- 1 cup jicama, shredded
- 4 tablespoons roasted peanuts, crushed
- 4 tablespoons fried shallots
- 1 bunch fresh coriander, chopped
- for the sauce:
- 4 tablespoons tamarind paste
- 2 tablespoons shrimp paste
- 2 tablespoons palm sugar
- 2 tablespoons water
Instructions

Slice the cucumbers, green apples, pineapple, and tofu into bite-sized pieces.

In a large serving bowl, combine the cucumbers, green apples, pineapple, tofu, bean sprouts, potatoes, and jicama.

In a small bowl, mix together the tamarind paste, shrimp paste, palm sugar, and water to make the sauce.

Pour the sauce over the fruit and vegetable mixture and toss well to coat.

Garnish the Rojak with crushed peanuts, fried shallots, and fresh coriander.
