  • 1 can (14 oz) palm hearts, drained and sliced
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1/2 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the palm hearts, mixed salad greens, cherry tomatoes, red onion, black olives, and feta cheese.

  2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper until well combined.

  3. Drizzle the dressing over the salad and toss to coat all the ingredients evenly.
