How To Make Indonesian Karedok Recipe

A refreshing salad dish with a peanut sauce dressing.

Serves:

Ingredients

  • 2 cups of beansprouts
  • 2 cups of green beans, cut into bite-sized pieces
  • 1 small cucumber, peeled and sliced
  • 1 small cabbage, shredded
  • 1 cup of basil leaves
  • 1 cup of mint leaves
  • 1 cup of cilantro leaves
  • 2 kaffir lime leaves, finely shredded
  • For the dressing:
  • 1 cup of roasted peanuts, finely ground
  • 2 cloves of garlic, minced
  • 2 red chili peppers, finely chopped
  • 1 tsp of shrimp paste
  • 2 tbsp of tamarind paste
  • 2 tbsp of palm sugar
  • 1/4 cup of water

Instructions

  1. Blanch the green beans and beansprouts in boiling water for 2 minutes, then drain and rinse in cold water.

  2. In a large bowl, combine the blanched green beans and beansprouts with the cucumber, cabbage, basil leaves, mint leaves, cilantro leaves, and shredded kaffir lime leaves.

  3. In a small saucepan, heat up the water and add in the tamarind paste, palm sugar, shrimp paste, garlic, and red chili peppers. Stir well until everything has dissolved and combine this mixture with the ground peanuts.

  4. Mix the peanut sauce dressing with the vegetables thoroughly before serving.
